JASMINE RICE WITH DRIED CRANBERRIES & CITRUS

I’m pretty good at coming up with main dishes for dinners, but I often find myself stumped by sides, but this is one of my all time favorite go to side dish recipes that can be thrown together quick and never gets old, so for those of you who often find yourself at a loss when it comes to the rest of dinner, I thought I’d share this with you today.

This rice is easy to throw together and you can use any rice you like, or it’s really awesome with cous cous instead of the rice. This is also very much an “eyeball it” recipe, so you can adjust things to your taste.
DRIED CRANBERRY CITRUS RICE
Rice or cous cous of any kind-cooked
1/2 cup dried cranberries
1/2 cup of nuts (we like slivered almonds or walnut pieces)
1 lemon – zest and juice
handful of cilantro – finely chopped
Heat a saute pan over medium heat and toast the nuts. To toast the nuts, place them in the saute pan and turn frequently to prevent burning.
While nuts are toasting, in large mixing bowl, combine rice, cranberries, lemon juice and zest, and cilantro. Add the toasted nuts and mix it all together and serve.
That’s it! I’m not kidding when I say that every time we make this, the husband and I ooo and ahhh over it like it’s the first time all over again. It’s that good. PROMISE!
