In case you haven’t heard, hey, it’s the Super Bowl this weekend Today I’ve got one of our favorite go-to, quick and easy weeknight recipes for you that also happens to be perfect for a game day party. I love this Easy BBQ Chili Recipe because aside from quickly cooking up the meat, it’s a matter of dumping everything else in a pot or crock pot and just letting it chill for a while. And yes, I said BBQ chili. That sounded gross to me the first time my husband convinced me to try it (actually I think he sneaked it in), but I’m telling you, the secret is in the sauce in this chili. It gives it this little bit of sweet, little bit of tang, depth of flavor that is ridiculously amazing! (Depth of flavor??? Who am I? I think I’ve been watching too much Chopped.)
So here’s how it’s done:
Easy BBQ Chili
1 lb lean ground beef
1 yellow onion; diced
3 cloves garlic; minced
1 can kidney beans
1 can great northern or canelini beans
1 can chili beans
2 cans diced tomatoes
1 cup of BBQ sauce (more to taste if desired)
Cook ground beef, onion and garlic in a large skillet or pot over medium-high heat until beef crumbles and is no longer pink, and onions are translucent. Combine the meat with the rest of the ingredients, either in a pot or slow cooker and simmer on low for 3-4 hours (2-3 hours for stove top pot).
It’s as simple as that! I love this recipe because you can sort of just use whatever beans you have on hand (chickpeas are awesome in this too)! Add your favorite toppings, make some nachos, chili cheese fries, or just some good old cornbread (all combos that we cycle through regularly around here).
