Do you remember that Rice Krispie Treats commerical back in 90’s? The one where the mom pretends it’s like this huge undertaking to make Rice Krispie treats and then right before she serves them to her family, she splashes water from the fish tank on her face and dusts herself with flour and messes up her hair so that it looks like she’s been slaving awayy? It was one of my mom’s favorite commercials and now that I’m a mom, it gives me a pretty good laugh too. Sometimes I like to pretend that I’m a domestic goddess (which I’m so not) and these SUPER easy cookies are my go-to when I want to fill the cookie jar, but really just can’t stand the idea of baking cookies from scratch, which is always–I am not a fan of baking because I always screw it up. For the record, it’s basically impossible to mess these up, so if you’re baking inept like me, these are your jam! You may notice that these cookies are similar to the the Lemon Pound Cake cookies I shared a while back, because it’s basically the same recipe. The possibilities are seriously endless with this one little cookie recipe.
So, here’s the recipe:
1 box yellow cake mix
1 tsp baking powder
1/2 cup vegetable oil
1 cup chocolate chips
Preheat the oven to 350°. In a large mixing bowl (or mixer), beat together cake mix, eggs, baking powder, and vegetable. Once the ingredients are combined, fold in the chocolate chips. Drop teaspoonfuls of the dough onto a cookie sheet and bake at 350° for 10 minutes. (Don’t let the cookies brown.)
And that’s that. Your cookie jar is full, you look like a rock star, and it only took like 30 minutes and almost none of the mess!
