BAKED HONEY OAT CHICKEN FINGERS

I know recipes aren’t something I share a lot around here, but I do actually cook–sometimes. I’m pretty blessed with a husband who thinks that cooking is relaxing so I’m off the hook quite a bit, but when I do cook, I’ve got skillz–just sayin’. Anyway, today I’m sharing one of our FAVORITE chicken recipes that’s been in our repertoire since the first year of our marriage. Adelie is a fairly picky eater, so the list of things she actually requests for dinner is fairly short, and the list of things that will ensure a meltdown-free butt-firmly-planted-in-the-chair, enjoyable family meal, is even shorter, but this is one of them. In fact, her favorite cereal is dubbed “chicken cereal” (Honey Bunches of Oats), because it’s the main ingredient in this recipe and what makes it soooo good.

BAKED HONEY OAT CHICKEN FINGERS

2 lg boneless, skinless chicken breasts or 8 chicken tenders4 cups honey oat cereal (like honey bunches of oats) 1 cup panko bread crumbs
1/2 tbsp garlic powder
1 tbsp onion flakes
1 tsp paprika
1 tsp salt
1/2 tsp pepper
2 eggs
flour for dredging 
Heat oven to 425°F. Line baking sheet with foil and spray with cooking spray. 

If using chicken breasts (instead of tenders), place chicken in a plastic bag or plastic wrap and pound the chicken breasts out to about a 1/2 inch thick. Remove chicken from the bag and cut into strips.

Place cereal in a second, large plastic bag, seal, and crush cereal with a mallet. Once cereal is crushed, place in a shallow dish and add bread crumbs, garlic powder, onion flakes, paprika, salt, and pepper. Mix well. 

Beat eggs and place in shallow dish, place flour in another shallow dish.

Coat the chicken in the flour, dip into eggs to coat, then roll in cereal mixture. Place chicken on the baking sheet. 

Bake in the oven for 15-20 minutes.

These are amazing all on their own, but I love mixing some honey and whole grain mustard into some plain Greek yogurt for a light, super delicious honey mustard sauce. They would also be great in salads, as a crunchy chicken sandwich–basically anything. We LOVE them!
